At Viilu, we celebrate local ingredients—something that is also reflected on our plates!
Satama's Viilu continues to implement its responsible food philosophy with the new autumn menu, which features a delicious perch dish as the star. The dish includes pan-fried perch, a cake made from Jerusalem artichokes and potatoes, a sauce made from freshly foraged chanterelles, broccolini, and a refreshing apple-fennel salad.
We source our perch from the local company Fishvalley, which practices responsible fishing in Kivijärvi. We have kept the perch dish on our menu from the very beginning to highlight the importance of local ingredients and sustainable development. The crowning chanterelle sauce is made from mushrooms that we pick ourselves, emphasizing our close relationship with nature and the importance of respecting the environment.
