Part of responsibility is locality.
A significant part of JALO Kitchen & Lounge’s responsible operations involves working with local producers. This, of course, includes the local Hiisi Brewery, with whom we have a history spanning several years.
During our summer visit, we asked Mikko Mäkelä from Hiisi how responsibility is reflected in their operations.
Responsibility is a broad concept, but we strive to consider it in our collaborative projects. Examples include utilizing spent grain for biofuel, bait for Järki Särki, ingredients for Jalo’s malt bread, and remedies for horses’ stomach issues. Responsibility also includes the goal of making Hiisi a good and fair workplace for everyone. Locality in our operations is reflected through collaborations, such as with restaurants like Jalo, or more unique ones like using donuts from the neighboring bakery or coffee from the local roastery in our beer.
At Jalo, you can find Hiisi’s products year-round, both in bottles and on tap, not to mention Jalo’s malt bread made from spent grain!
